Aamsotto are mango rolls, made using Mangoes, Sugar and Lime. Known as Aam Papad in other parts of the country, it is a sweet leather made out of mango pulp mixed with concentrated sugar solution and sun dried. Since it can be preserved for months, it is used in off season of mangoes. If you do not like it sweet, you can add kala namak (rock salt) and make it spicy. Sweet, sour or spicy, tweak it to your liking and relish the savoury Aam Papad with your friends, kids or family.
